Nates Recovery Breakfast Burrito

1 lrg spinach & herb Tortilla

3 eggs

1/3 cup Black and or refried beans

1/2 cup baby spinach

1/3 cup yellowcorn chips

1/4 cup sala

 

*optional

1 tbsp BBQ suace

1tbsp louisiana Hot sauce

1 small slice mozzarella/mexican/swiss cheese

 

Cook all 3 eggs broken yoke, but not scrambled as one whole. Remove yokes if you're one of "those" people. medium heat.

 

Once one side is done Pour over the *hot sauce and BBQ sauce and flip.

 

While thats cooking wet tortilla until lightly moist leave no part dry on either side

Microwave for 1 min.

 

Remove from mircowave should be very malleable if not microwave add 30 sec.

 

layer tortilla on one side with spinach, beans, sala, lightly crush and layer chips in smaller than thimble bits. Chop eggs into finger size slices and layer. Lay optional cheese on top.

 

Roll buritto in on itself folding sides in and starting on the layered side. You should have fat and but together burrito with cheese against the seam.

 

lay burrito on the same skillet and heat used for the eggs with the seam facing down cook for 3-5 minutes on seam then flip and cook for 3 min. Flip again if both sides are not golden brown

 

The melting cheese will help hold the burrito together but it's ok not to. I pass on the cheese.

 

The eggs are the healthiest meat for recovery but chicken is ok too

Sour cream optional topping but not really all that good for you.
